Abstract:
The expression sustainability originated in forestry in the 17(th) century and has been introduced into almost all areas of life, especially in recent decades. The three pillar model of sustainability consists of the concurrent and equitable implementation of ecological, social and economic goals. In environmental and developmental politics, this concept has led to the expression of sustainable development, with the goal of an enduring and just management of the earth. The expression sustainable nutrition is based on the concepts of wholesome nutrition and nutritional ecology as developed in Giessen. Sustainable nutrition encompasses the whole nutritional system. Analyses and appraisals of its complex interrelationships are necessary, from production, processing, packaging, transport and trade to the purchase, preparation and consumption of food, as well as waste disposal. The goal is the formulation and implementation of robust scientific findings on the interlocking influences of health, ecology, society and economics in handling
