Abstract
During two seasons, the lightness (L) of flour of a number of sorghum varieties were evaluated with the aid of a Hunter Lab Colourquest 45/0 following various dehulling treatments. The varieties included those preselected for high L-values, those obtained from rural farmers and high tannin varieties. On average, the preselected group of varieties indicated highest, the farmers' varieties intermediate and the high tannin group lowest L-values. The method could be used as a rapid screenings procedure among varieties using whole-sorghum flour. A number of superior varieties were identified exhibiting superior flour colour including a high tannin variety and one with potential for whole-sorghum flour.
