Abstract:
In the maturing wheat grain (cultivar: winter wheat "Caribo") the protein content (% in the dry matter of the grain) and the protein composition (proportions of protein fractions and proportion of amino acids in selected protein fractions) during grain development at different nitrogen supply of the wheat plant from anthesis have been studied. The following results have been obtained: 1. The protein content is increased at all investigated terms by an additional nitrogen supply. First the protein content of both nitrogen supply-variants decreases strongly (from 34.1, respectively 35.9%, to 10.9, respectively 13.9% in grain dry matter) during grain formation as a result of an increased storage of starch, but increases again markedly to the end of grain formation in the variant with an addition nitrogen supply (to 15.9%). 2. During grain development in both of the nitrogen supply levels the proportions of the protein fractions change very strongly. .sbd. An additional nitogen supply from time of flowering causes a marked change in the ratio prolamine: glutenine in the full ripe grain by an increasing synthesis of prolamine to the end of grain formation.sbd.that is 0.92:1 in comparison with 0.68:1. 3. The proportions of the amino acids of the water soluble, the alcohol soluble, and the insoluble residue-N fraction are not constant during grain formation. In the water soluble protein fraction the changes of the proportions of amino acids in the progress within a given time of the grain formation are strongly marked, which points to the "pool-function" of this fraction. Between the two nitrogen supply variants there are more or less marked differences in the proportions of amino acids of the analysed protein fraction.
