THE PROTEIN-QUALITY OF WATER DEBITTERED LUPINES (LUPINUS MUTABILIS) IN COMBINATION WITH OTHER PROTEIN-SOURCES

Abstract
Water debittered lupine seeds (L. mutabilis) were analyzed for their nutrient content and compared with other plant protein sources. The supplementary effect of lupine protein and protein from wheat, oat, barley, rice, maize, potato, quinua and fish was investigated with rats by determination of the Protein Efficiency Ratio (PER) of the respective mixtures. Lupine protein and cereal proteins exert a considerable effect, resulting in PER values that exceed by far those of the proteins fed separately. No improving effect occurred in a mixture of potatoes and lupines. High quality proteins like quinua and fish protein showed no mutual supplementary effect, but could improve the quality of the lupine protein to a great extent. The best results could be obtained with combinations of 3 different plant proteins, in which lupine protein always contributed 1/3 of the total protein. These mixtures came up to the PER values of casein or other animal proteins and may be applied as an economical way to prevent and to combat malnutrition.
