Abstract:
The protein composition of the material accumulated in sprouting shoots and roots during the germination of cereal grains was studied. Summer barley, cv. Aramir and maize cv. Gelber Badischer Landmais were germinated for 120 h at 25.degree. C. The dry matter of the shoot sprouts had a much higher content of total N and of total soluble N than the dry matter of the rootlets. The percentage of the salt-soluble protein fraction (globulins) of the total soluble N and the percentage of the residual N fraction of the total N were distinctly higher in the material of the shoot sprouts than in the material of the rootlets; the percentage of the alkali-soluble protein fraction (glutenins) was somewhat higher in the rootlet material. The alcohol-soluble protein fraction (prolamins) amounted to only 2-3% in both organs. In barley, the percentage of the water-soluble N fraction of the total soluble N was .apprx. 62% in the rootlet material and about 52% in the material of the sprouting shoots; in maize the percentage of water-soluble N amounted to about 75% in both organs. The hydrolized proteins of the remaining grain material and of the material of the sprouting shoots and roots of barley contained more lysine, arginine, valine and isoleucine but less serine than those of maize; the material of the sprouting shoots and roots of barley contained less aspartic acid than that of maize. In the sprouting shoots of barley, the contents of phenylalanine were higher, those of histidine and tyrosine lower than in the shoots of maize; the rootlets of barley contained more threonine, leucine and glutamic acid and less proline, alanine and aspartic acid than those of maize.
