PROTEIN-QUALITY OF LUPINUS-ALBUS AND LUPINUS-MUTABILIS

Abstract
Different sweet varieties of L. albus and semi-sweet varieties as well as water and/or ethanol debittered products of L. mutabilis were chemically analyzed. The protein contents in the dry matter amount to 36.2-38.8% in the seeds of L. albus and about 55.9% in water debittered seeds of L. mutabilis. The oil-cake of L. mutabilis contains 65.3% protein. The amino acid analyses showed that the lupin protein is characterized by a low level of S-amino acids, the content of which amounts to only 50% of that of the FAO [Food and Agriculture Organization] standard. The protein quality was measured using the biological tests PER (protein efficiency ratio), NPU [net protein utilization] and BV in rats on diets containing 10% protein with and without supplementation withDL-methionine. Casein was used as reference protein. For all non-supplemented diets low PER-values were measured: 10.07 for raw semi-sweet L. mutabilis and 1.50 for L. albus var. astra. With 0.2% DL-methionine in the diet the PER-values could be improved to 2.15 for L. albus and 2.47 for L. mutabilis; PER of casein = 2.5 (corrected). Both raw and processed seeds and oil-cake of L. mutabilis showed with about 84% an excellent apparent digestibility, L. albus had an apparent digestibility of 72.5-79.2% and casein of about 87%. NPU and BV of the water debittered seeds of L. mutabilis confirmed each other: without methionine supplementation NPU = 34.9, BV = 38.6; with 0.2% DL-methionine NPU 61.2, BV 66.5 (Casein NPU = 68.3, BV = 74.3). The true digestibility of the lupin protein reached 92%, which is comparable with that of casein. The lupin protein enriched with DL-methionine (2% in the protein) or fortified with complementary protein carries rich in S-amino acids, is a promising protein source for animal and human nutrition.
