To clarify the variation of grain quality under practice conditions the products of a grain mill factory were investigated. Grain samples from 40 cereal products resulted from 12 different crop species were analyzed with regard to the content of total phenolics (Folin-Ciocalteau assay) and antioxidative activity (ORAC assay). The received results show that maximal content of total phenolics with more than 8000 μg gallus acid equivalents per g DM were found in wheat bran samples. Contrary to that very low contents of total phenolics with lower than 1000 gallus acid equivalents per g DM were detected in parboiled rice, basmati rice, cornflakes, couscous (from durum wheat) and rolled millet. Millet samples (seeds and rolled millet) had lowest content of total phenolics compared to all investigated crop species. Values of antioxidative activity (ORAC) varied from minimal 15 μmol trolox equivalents per g DM (Cornflakes) until maximal 110 μmol trolox equivalents per g DM (wheat bran). High ORAC values with more than 50 μmol trolox equivalents per g DM were found in oat bran, large rolled spelt, buckwheat kernels and rolled einkorn. From the conducted investigations can be concluded that none of the analyzed crop species can be chosen as the best. It can be stated that the method of cereal processing is more important than the cereal species which is used. Our results confirm other findings that cereal products resulting from bran and whole grain flour are characterized in most cases by higher content of total phenolics and higher values of antioxidative activity.
