Abstract

This chapter introduces the role of quantitative high-performance thin-layer chromatography (HPTLC) in food analysis. Applications and advantages are discussed. The examples highlight simplicity, sustainability, method greenness, robustness against matrix, parallel analysis, and efficiency and that validated methods lead to results comparable to other chromatographic techniques. Especially as hyphenated technique, HPTLC has immense potential and offers new opportunities to improve our knowledge on food. The gain in new information is discussed for multiplex planar on-surface assays. A paradigm shift from in vitro assays that are inaccurate for complex samples to sound planar on-surface assays is worth considering. Only the differentiation of agonistic, antagonistic, synergistic, and false-positive compounds in the same analysis of a food sample provides understanding. Orthogonal coupling of planar and column-based separations to spectrometric and biological detectors leads to generic superhyphenations for further characterization of bioactive compound zones. A portable miniaturized system is reported for nontarget food analysis.
